Sustainability Communication for the Bohlsener Mühle Edutainment Pop-Up Restaurant

The Bohlsener Mühle and innovative chefs are demonstrating what climate-conscious enjoyment looks like at their Edutainment Pop-Up Restaurant at foodlab Hamburg.

A diverse selection of ingredients, expertly prepared and fully climate-transparent—this is what the Bohlsener Mühle brings to life at its Edutainment Pop-Up Restaurant in March.

To educate guests on the climate impact of food and to showcase that delicious meals can be both regional and climate-friendly, Bohlsener Mühle is teaming up with foodlab Hamburg to launch an innovative four-week Pop-Up Restaurant. From climate-friendly sandwiches and bowls to crop rotation menus crafted by experimental Hamburg-based chefs, the pop-up restaurant offers a culinary journey into the world of climate-transparent dining and the organic-regional product range of Bohlsener Mühle. Through the Bohlsener Mühle website, guests can create their own custom climate bowls using a climate calculator—all while learning about the environmental impact of their ingredient choices. How large is the carbon footprint of their bowl? How many kilometers have the ingredients traveled before reaching the plate? What effect does their favorite bowl have on crop rotation in the fields? These questions are explored in an interactive and engaging way. In addition to climate bowls, creative Hamburg-based chefs will be preparing delicious crop rotation menus on weekends from March 1 to March 31. With a thoughtfully planned crop rotation, nutrients are replenished in the soil, and humus content in the fields is increased—contributing to sustainable agriculture.
